Dried fruit, grain and a cellar-like aroma

The deep reddish-brown liquor is smooth and mellow, with dried fruit, baked grain, aged wood and soft sweetness.

A pronounced humid, cellar-like note is part of this batch's profile. Some drinkers perceive damp wood or wet earth; others notice an aroma reminiscent of mould. Later steeps become softer and sweeter.

An experimental fermentation

Tie Guanyin and Jin Xuan make up most of the cultivar blend. Moychay developed this tea while experimenting with fermented and post-fermented oolongs.

The leaves undergo controlled pile fermentation under elevated humidity, followed by prolonged baking, or hongbei. The method draws on ripe pu-erh and Liu Bao dark-tea processing.
