Leaf and craft
This Jin Xuan GABA oolong comes from Ping Shan Village, Datian County, in Fujian's Sanming region.
Its defining step is anaerobic fermentation: the leaves spend a stage in an oxygen-reduced environment. Fixation, rolling and drying follow, producing the compact, tightly rolled leaf.
First brew
Use 7 g per 150 ml and begin with a 10-second infusion. Extend later rounds as the tightly rolled leaves open.
