In the cup
The tightly rolled material shows the golden tips associated with Jin Jun Mei.
In the cup, a bright-red infusion is sweet, mellow and full-bodied. Smooth texture carries the caramel-like sweetness into the finish.
Leaf and craft
Single buds of Mei Zhan and Cai Cha make up this tea. The gardens lie in the southern Wuyi foothills of Fujian.
Withering, oxidation, rolling, drying and refining produce the finished black tea.
First brew
Use a white porcelain gaiwan and water at 100°C. Steep for 10–15 seconds to start, then increase later infusions.
Continue for up to ten steeps as the flavour and aroma develop.
