Leaf and craft
The Jin Xuan leaves grow at around 1,100 metres in Fujian.
Anaerobic fermentation is the defining GABA processing step, followed by fixation, rolling and drying.
First brew
Use 7 g per 150 ml in a gaiwan with water at 95°C. Start at 10 seconds and increase the time through later infusions.
