Yunnan Da Ye Zhong leaf comes from Nan Nuo Mountain in Menghai, Yunnan. Picking takes one bud with three leaves.

Withering and fermentation are followed by sun-drying.

First brew

Short infusions, fully decanted

Use 7 g per 110 ml at 98°C. Steep the first seven infusions for 6–10 seconds, then extend to 15–20 seconds.

Pour each brew off completely.
