Follow it past the first bitterness

The first three infusions can be noticeably bitter, but without roughness. Later rounds soften towards sweetness and a delicate balsamic character.

Flowers and light fruit accompany dry wood and aloe notes. Look for pear, pineapple, grape and citrus in a smooth, light-bodied cup.

This tea was harvested in spring 2023 from wild-growing trees for the Thailand Tea Forest Project.

The dry leaf includes buds and has light smoky, floral and fruity aromas.

First brew

Choose short rounds or a larger cup

For gongfu, use 5–6 g per 100 ml at 96°C. Start at 40 seconds and add 10–15 seconds per round.

For Western brewing, use 5–6 g per 250 ml at 96°C, with successive steeps of 2, 3 and 4 minutes.
