The bright orange-red liquor has a rich, mellow body. Ripe fruit and roasted sweetness dominate.

Its smooth texture and relatively low bitterness suit both hot infusions and cold brewing.

Summer leaf, intensive roasting

Crimson is a red oolong made from Qingxin Daye in southern Fujian's highland gardens at around 1,100 metres. Summer picking takes one bud with three leaves.

Sun-withering, repeated shaking and high oxidation precede fixation, rolling and intensive roasting. The dark, semi-ball-shaped leaves combine black-tea depth with the texture and aromatic layering of oolong.

First brew

Hot or cold, keep the fruit in view

For gongfu, use 6–7 g per 150 ml at 95°C. Begin at 10 seconds and extend later infusions.

For cold brewing, use 3 g per 300 ml of mineral water; a longer infusion emphasises the fruit sweetness.
