Leaf and craft
The Shui Xian bushes grow in the southern Wuyi foothills in Fujian. The leaves are harvested in April and May.
Traditional processing includes sun-withering, oxidation, fixation, rolling, drying and refinement.
First brew
Use water at 95°C and begin with a 10–15 second infusion. Gradually extend subsequent rounds.
