A full, rounded body and smooth mineral character continue into a long sweet finish.
Leaf and craft
Nong Xiang means strong aroma. This Tie Guan Yin comes from Sanming, Fujian, at around 1,300 metres, and is hand-picked as one bud with three leaves.
Outdoor and indoor withering, repeated bruising, oxidation, fixation and rolling lead into deep baking. The bake shifts Tie Guan Yin's greener character towards fruit, honey, orchid and mineral notes.
First brew
Use 7 g per 150 ml at 95°C. Begin with 10 seconds and gradually extend subsequent infusions.
