In the cup

Honey through the whole cup

The liquor is deep reddish-orange and dense, with a smooth, velvety body.

Ripe fruit and roasted sweetness support the honey-like fragrance. That honeyed character remains in the aftertaste.

Leaf and craft

Jin Xuan taken to red oolong

Spring Jin Xuan leaf from Datian County in Fujian undergoes extended oxidation and slow drying.

The finished leaves form dark, glossy semi-balls, with the body and aroma of a red oolong.

First brew

A short hot brew or a slower cold one

Use 6–7 g per 150 ml at 90°C. Start at 10 seconds, then lengthen subsequent infusions.

For cold brewing, use 3 g per 300 ml of mineral water. A longer infusion draws out the honeyed sweetness and ripe-fruit character.
